Prepare Chicken Skins

Clean and dry
If needed, separate skin from chicken pieces and remove excess fat. Lay skins flat on a cutting board and blot thoroughly with paper towels until very dry. This step is critical for crisping.

Cut into pieces
Cut the skins into 2–3 inch pieces (bite-sized). Uniform pieces help them cook evenly.

Season and coat
In a bowl combine kosher salt, black pepper, baking powder, garlic powder, and smoked paprika. Toss the chicken skin pieces with the dry mix until evenly coated. Let sit 10 minutes to allow the baking powder to draw out moisture and begin crisping.

Heat oil
Pour neutral oil into a large heavy skillet (cast-iron or stainless steel) to reach a depth of about 1/8–1/4 inch. Heat over medium-high until shimmering and a small piece of skin sizzles immediately (approx. 350°F / 175°C).

Make the Dip (optional)

Whisk together sour cream (or Greek yogurt), mayonnaise, hot sauce, lemon juice, salt, and black pepper in a small bowl. Taste and adjust seasoning. Chill until serving.
Serve
