Make the Roux

In a large pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly until the mixture is a dark brown color, about 15-20 minutes.

Cook the Vegetables

Add the chopped onion, green bell pepper, celery, and minced garlic to the roux. Cook for another 5-7 minutes until the vegetables are soft.

Combine Ingredients

Stir in the chicken broth, diced tomatoes, bay leaves, Cajun seasoning, salt, and black pepper. Bring the mixture to a boil.

Add Seafood

Once boiling, reduce heat and add the shrimp, crab meat, and fish chunks. Simmer for about 10-15 minutes until the seafood is cooked through.

Final Touches

Remove bay leaves, taste and adjust seasoning with hot sauce, salt, or pepper if necessary. Serve hot.
