Preparing the Catfish
Season the Catfish
In a small bowl, mix paprika, cayenne pepper, garlic powder, onion powder, salt, and black pepper. Rub the spice mixture over the catfish fillets. Let marinate for at least 30 minutes.
Cooking Methods
You can cook the catfish in one of three ways: blackened, broiled, or crispy. For blackened, heat a skillet until it's very hot, add oil, and cook the fish for about 4-5 minutes on each side. For broiled, place catfish on a greased baking sheet and broil for 5-7 minutes per side. For crispy, dip catfish in flour, then pan-fry in hot oil until golden brown, about 3-4 minutes per side.
Making the Hushpuppies
Prepare the Batter
In a mixing bowl, combine cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together milk, egg, and green onion. Pour the wet ingredients into the dry ingredients and stir until just combined.
Fry the Hushpuppies
Heat oil in a deep pan over medium-high heat. Once hot, drop spoonfuls of the batter into the oil and fry until golden brown, about 3-4 minutes. Remove and drain on paper towels.
