Preparation
Prepare the Mahi Mahi
Rub the Mahi Mahi fillets with olive oil and coat them generously with blackening seasoning on both sides.
Grill the Fish
Preheat your grill to medium-high heat. Grill the seasoned Mahi Mahi fillets for about 4-5 minutes on each side or until the fish is cooked through and has a nice char.
Assembly
Assemble the Dish
On a plate, layer the cabbage and lettuce as the base. Place the grilled Mahi Mahi on top and then add a generous amount of Pico de Gallo. Finish with a sprinkle of crumbled feta cheese.
