Combine ingredients
Add the cognac, orange liqueur, fresh lemon juice, and simple syrup (if using) into a cocktail shaker. If using egg white, add it now.
Dry shake (if using egg white)
If you've added egg white, shake the mixture vigorously without ice for about 10–15 seconds to emulsify and build foam.
Shake with ice
Add ice cubes to the shaker and shake vigorously for 10–15 seconds until the shaker is well chilled and slightly frosted.
Strain and serve
Double-strain the cocktail into the prepared sugar-rimmed chilled coupe or martini glass using a hawthorne strainer and a fine mesh strainer (if available) to ensure a smooth texture and to remove ice shards and egg white foam debris.
Cleanup & Notes
Discard used ice and wash shaker and strainers. Taste and adjust sweetness on future batches by altering the simple syrup amount. For a more tart Sidecar, increase lemon juice slightly; for a richer version, use 2.25 oz cognac and 0.75 oz liqueur.
