Method
Prepare the Fruit Blend
Combine fruits
Place the pineapple chunks, diced mango, and hulled strawberries into a blender. Add the fresh orange juice to help with blending.
Blend until smooth
Blend on high until the mixture is completely smooth and no large fruit pieces remain, about 30–45 seconds depending on your blender.
Adjust Liquid & Sweetness
Add water and sweetener
Add the cold water, light simple syrup (or honey syrup), and freshly squeezed lime juice to the blender. Pulse briefly to incorporate, about 5–10 seconds. Taste and add up to 1 additional tablespoon of sweetener if you prefer it sweeter.
Strain (optional)
For a smoother, refined beverage, pour the blended mixture through a fine-mesh sieve into a pitcher, using a spoon to press the pulp and extract liquid. Discard or reserve pulp for another use. If you prefer a pulpy, rustic texture, skip straining.
Finish & Serve
Chill and muddle mint
Place half of the mint leaves in a large serving pitcher or individual glasses. Gently muddle the mint with the back of a spoon to release aroma—do not over-muddle to avoid bitterness. Add ice cubes to the pitcher or fill glasses with ice.
Combine and top with fizz
Pour the strained or unstrained fruit blend over the ice and muddled mint. Stir gently to combine. If you want a fizzy finish, top each glass or the pitcher with the club soda or sparkling water (about 1/2 cup total) and stir once gently.
Garnish and serve
Taste and adjust acidity or sweetness (a squeeze more lime or 1 tsp syrup). Garnish with remaining mint leaves and lime slices or a pineapple wedge. Serve immediately while chilled and fizzy.
