Coconut Preparation
Open the coconut
Place the whole young coconut on a stable cutting board. Using the back of a heavy knife or cleaver, firmly strike around the top (the pointed end) in a circular pattern to create a small opening. Continue until the top loosens and you can pry off a cap. Aim to create a pourable hole about 1.5–2 inches (4–5 cm) wide.
Scoop flesh (optional)
If you want to serve the coconut with some flesh, insert a spoon or scoop into the opening and scrape out a few tablespoons of soft coconut meat. Place the flesh in a small dish or leave it inside the shell for presentation.
Assembling the Drink
If desired, taste the raw coconut water. If it is very mild and you prefer a slightly sweeter drink, stir in 1 tsp of simple syrup or honey until dissolved. Adjust to taste (0.5–2 tsp).
Add 1 cup of ice into the prepared coconut shell or into a serving glass, depending on presentation preference.
Pour approximately 10–11 oz of the reserved coconut water into the coconut shell over the ice. Leave some room at the top for the lime juice.
Add lime
Roll the half lime on the counter to release juices, then squeeze the lime over the coconut water (about 1/2 lime = 1–1.5 tsp juice). Taste and add more if you prefer a brighter citrus note.
Garnish with 3–4 mint leaves and insert a straw if using. If you scooped flesh earlier, return a small spoonful to the shell for texture.
Serve immediately with the coconut cap on the side or perched back on the shell for presentation.
Cleanup & Storage
Cover and refrigerate any leftover coconut water in a sealed container for up to 24–48 hours. Discard any coconut flesh left at room temperature after 2 hours.
