Juice and measure

If not using pre-made juice, juice fresh pomegranates and oranges. Strain pomegranate juice through a fine mesh sieve to remove pulp and membrane. Measure 1 cup pomegranate juice and 1/2 cup orange juice and place in a mixing pitcher.

Add lemon and sweeten

Add 2 tablespoons fresh lemon juice and 2 tablespoons simple syrup to the pitcher. Stir vigorously for 15–20 seconds until sugar is dissolved and juices are well combined.

Dilute

Add 1/2 cup cold water to the juice mixture and stir to taste. This balances acidity and concentration; adjust with an extra tablespoon simple syrup if needed.

Chill

Place the completed base in the refrigerator for 10 minutes if time allows, or proceed immediately—keep chilled until serving.

Sparkle & Finish

Prepare glasses

Fill two serving glasses halfway with ice cubes (about 1 cup ice per glass total).

Combine and add sparkle

Divide the chilled citrus-pomegranate base evenly between the two glasses (about 3/4 cup per glass). Top each glass with 1/2 cup club soda or sparkling water poured gently to preserve effervescence. Stir once gently with a bar spoon to combine.

Garnish

Sprinkle approximately 1 tablespoon pomegranate arils over each glass, add two thin orange slices to the rim or float in the drink, and tuck 3 fresh mint leaves into each glass if using.

Serve immediately while sparkling. Provide a straw or spoon for scooping arils.
