Brown Sugar Syrup
Make syrup
Combine 1/2 cup packed light brown sugar and 1/2 cup water in a small saucepan over medium heat. Stir until the sugar dissolves and the mixture comes to a gentle simmer.
Add 2 whole cloves and the large strip of orange peel to the saucepan. Reduce heat to low and let the mixture gently simmer for 4–5 minutes to infuse the flavors. Do not boil vigorously.
Remove the pan from heat and let the syrup cool to room temperature (about 20–30 minutes), allowing the cloves and orange peel to steep further for a richer flavor.
Strain the cooled syrup through a fine-mesh sieve to remove cloves and orange peel. Transfer the syrup to a clean jar or bottle. The syrup will keep refrigerated up to 2 weeks.
Cocktail
Place a large ice cube in an Old Fashioned glass.
Pour 2 oz bourbon over the ice.
Add 1/2 oz (approx. 15 ml) brown sugar syrup to the glass.
Add 2 dashes of Angostura bitters.
Stir the cocktail gently for 20–30 seconds with a bar spoon to chill, slightly dilute, and integrate the syrup and bitters into the spirit.
Express the oils from one orange peel over the drink by holding the peel over the glass and giving it a firm twist, then rub the peel around the rim and drop it into the drink as garnish.
Serve immediately.
