Method
Blackberry Syrup (Prep)
Make syrup
Combine 1/2 cup blackberries, 1/4 cup granulated sugar and 2 tablespoons water in a small saucepan over medium heat. Stir and gently simmer, mashing berries with the back of a spoon, until sugar dissolves and mixture thickens slightly, about 4–6 minutes.
Remove from heat and let cool 5 minutes. Strain the mixture through a fine mesh sieve into a small bowl, pressing on solids to extract juice. Discard seeds/solids and let syrup cool to room temperature (or chill briefly) before using. Yield is about 3 tablespoons; use 3/4 oz per cocktail.
Mule Base
Build the cocktail
Fill a mule mug or highball glass with ice (about 1 cup). Add 2 oz bourbon, 1/2 oz fresh lime juice, and 3/4 oz blackberry syrup into the glass.
Top with about 4 oz ginger beer. Give the drink a gentle stir with a bar spoon (1–2 turns) to integrate ingredients without flattening the ginger beer.
Taste and adjust: add up to 1/4 oz additional blackberry syrup for more sweetness or another 1/4 oz lime juice for more brightness if desired.
Garnish & Serve
Skewer 2–3 fresh blackberries on a cocktail pick (or drop them into the drink). Add a lime wheel on the rim and slap the mint sprig between your palms to release aroma, then tuck it into the drink as a garnish.
Serve immediately with a straw. Estimated drinking temperature is cold; enjoy responsibly.
