Method

Cocktail

1

Prepare shaker

Fill a cocktail shaker halfway with crushed ice (about 3/4 to 1 cup) to chill and slightly dilute the drink while shaking.

2

Add spirits

Pour 1 oz white rum, 1 oz dark rum, 1 oz coconut rum, and 0.5 oz coffee liqueur (if using) into the shaker.

3

Add juices and sweeteners

Add 2 oz fresh pineapple juice, 1 oz fresh orange juice, 0.5 oz fresh lime juice, 0.5 oz grenadine, and 0.25 oz simple syrup to the shaker.

4

Shake

Secure the shaker lid and shake vigorously for 10–12 seconds until the outside of the shaker is frosty and the mixture is well chilled and slightly diluted.

5

Prepare glass

Fill a tall hurricane or highball glass with crushed ice (about 3/4 to 1 cup).

6

Strain and layer

Strain the shaken mixture into the prepared glass over the crushed ice. If you like the classic visual, slowly pour an extra 0.25–0.5 oz grenadine down the inside of the glass so it sinks and creates a sunrise effect.

7

Finish and serve

Garnish with a pineapple wedge, maraschino cherry, and lime wheel. Add a straw and a paper umbrella if desired. Serve immediately.

Garnish

8

Skewer the maraschino cherry and pineapple wedge on a cocktail pick, rest it on the rim with the lime wheel tucked behind. Place the umbrella on the rim for presentation.
