Pat dry

Place the 12 wing sections on a tray lined with paper towels. Pat each wing thoroughly to remove surface moisture. Removing excess water is essential to prevent sogginess and to help the coating adhere.

Trim and separate

If any wings are still connected in pairs, separate them at the joint. Tuck or remove excess skin if desired.

Season

In a large bowl combine 1 tsp kosher salt, 1 tsp black pepper, 1 tsp garlic powder, 1 tsp smoked paprika and 1 tbs neutral oil. Add the wings and toss until evenly coated. Let rest 10–15 minutes at room temperature (or refrigerate up to 2 hours) to allow seasoning to penetrate.

Dry-coat for crispiness

If you want extra-crispy wings (recommended for previously soggy wings), combine 1 tsp baking powder and 1 tbs cornstarch in a small bowl. Lightly sprinkle and toss the wings so each piece has a thin, even dusting. Baking powder raises pH and helps brown; cornstarch absorbs residual moisture and crisps the skin.

Cooking

Preheat oven to 425°F (220°C). Place a wire rack on a rimmed baking sheet and spray or brush lightly with oil. Arrange wings skin-side up in a single layer with space between pieces. Bake for 20 minutes, then flip wings and bake another 12–18 minutes until skin is deep golden and internal temperature reaches 165°F (74°C). If not sufficiently crisp, broil 1–2 minutes while watching carefully.

Air-fryer method (faster, very crisp)

Preheat air fryer to 400°F (200°C). Arrange wings in a single layer (work in batches if needed). Cook 18–22 minutes, shaking or flipping halfway, until skin is golden and crisp and internal temp is 165°F (74°C).

Pan-fry & finish

For a stovetop approach, heat 1–2 tbs neutral oil in a large skillet over medium-high. Add wings in a single layer and sear 3–4 minutes per side until golden. Reduce heat to medium, cover and cook 8–10 minutes until cooked through, then remove lid and cook a few minutes more to crisp the skin.

Sauce / Finish

Make sauce

While wings finish cooking, melt 2 tbs unsalted butter in a small saucepan over low heat. Stir in 3 tbs hot sauce, 1 tbs honey and 1 tsp apple cider vinegar. Warm until combined and slightly simmering, then remove from heat. Taste and adjust: add more hot sauce for heat or more honey for sweetness.

Toss wings in sauce

When wings are cooked and crispy, transfer them to a large clean bowl. Pour the warm sauce over the wings and toss gently to coat evenly. If you prefer saucier wings, add the full sauce; for a lighter coating, reserve half and serve on the side.

Garnish

Sprinkle 1 tbs chopped fresh parsley over the sauced wings for color and freshness (optional).

Prepare sides

Cut 4 celery sticks and 2 carrots into sticks if not already done. Arrange on a platter with the dressed wings and 1/2 cup ranch or blue cheese dressing for dipping.

Serve

Serve immediately while wings are hot and crispy. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in an oven or air fryer to restore crispness.
