Make the sauce
In a small bowl combine mayonnaise, ketchup, yellow mustard, Worcestershire sauce, dill pickle relish, garlic powder, smoked paprika and optional hot sauce. Whisk until smooth. Taste and adjust: add a pinch more relish for tang, a little more mayo for creaminess, or a drop more hot sauce for heat. Refrigerate until ready to use (can be made up to 24 hours ahead).
Burger Patties & Cooking
Form and season patty
Divide ground beef into a single 6 oz portion and form into a round patty about 3.5–4 inches wide and roughly 3/4 inch thick. Make a shallow dimple in the center with your thumb to reduce doming during cooking. Season both sides with kosher salt and freshly ground black pepper.
Cook the patty
Place the patty on the hot surface. Cook without moving for 3–3.5 minutes until a brown crust forms. Flip once and immediately place the American cheese slice on the hot side of the patty. Cook another 2.5–3 minutes for medium doneness (adjust time for desired doneness). Remove patty to a resting plate for 1 minute.
Bun & Assembly
Assemble the Tommie Burger
Spread about 1 to 1.5 tablespoons of Tommie sauce on the bottom bun. Place shredded lettuce over the sauce, then set the rested cheeseburger patty on top. Add the diced onion evenly over the patty, then arrange 3 pickle slices. Spoon an additional 1 teaspoon of Tommie sauce onto the top bun (optional) and close the burger.
Serve
Serve immediately while hot. Recommended accompaniments: fries or chips and a cold soda. Leftover sauce can be refrigerated for up to 5 days.
