Cook and ready proteins

If using bacon or breakfast sausage, cook them first. For bacon: pan-fry over medium heat until crisp (about 6–8 minutes), drain on paper towels and chop into bite-sized pieces. For breakfast sausage: crumble and cook in a skillet over medium heat until browned and cooked through (about 6–8 minutes). If using shaved ham, it can be used as-is or warmed briefly in the pan for 30–45 seconds.

Sauté vegetables (optional)

If using onion, bell pepper, or mushrooms, heat 1 tsp oil in a 8–10 inch nonstick or well-seasoned skillet over medium heat. Add vegetables and a pinch of salt, sauté until softened and any liquid has evaporated (2–4 minutes). Remove vegetables from pan and set aside with the cooked protein.

Make the egg mixture

Crack the three large eggs into a medium bowl. Add 1 tablespoon whole milk, 1 teaspoon salt, and 1 teaspoon black pepper. Whisk vigorously until mixture is homogenous and slightly frothy, about 20–30 seconds. This produces a tender, evenly textured omelette.

Cook the omelette

Heat an 8–10 inch nonstick skillet over medium-low to medium heat. Add 1 tablespoon butter and 1 tsp neutral oil. Heat until butter is melted and just beginning to foam but not brown (about 30–45 seconds). The oil helps prevent the butter from burning and promotes even browning.

Pour the whisked eggs into the center of the pan. Let sit undisturbed for 8–12 seconds until the edges begin to set. Using a silicone spatula, gently pull the set edges toward the center while tilting the pan to allow uncooked egg to flow to the edges. Repeat this motion around the pan for 30–45 seconds until the surface is mostly set but still slightly glossy and custardy on top.

Evenly distribute your chosen protein (about 2 oz ham or cooked bacon/sausage) and optional sautéed vegetables onto one half of the omelette. Sprinkle the chosen cheese (about 1 oz) over the protein and vegetables. If using thin-sliced American or Swiss, lay slices so they cover filling; if grated cheddar, sprinkle evenly.

Using the spatula, gently fold the empty half of the omelette over the filling to form a half-moon. Press lightly to seal. Cook another 30–60 seconds so cheese begins to melt and fillings are heated through. For a slightly creamier interior, remove from heat when center still slightly soft; for fully set, return pan to low heat for 30–45 seconds more.

Slide the omelette onto a warm plate, seam-side down. Garnish with chopped fresh chives if desired. Serve immediately.
