Prepare English muffins
Split the English muffins in half with a fork or knife. Lightly butter the cut sides with 1 tablespoon of unsalted butter (reserve any extra). Place the muffins, buttered side up, on a baking sheet or in a toaster oven.
Toast muffins
Toast the buttered English muffin halves until golden and crisp on the cut side, about 3–5 minutes in a 375°F (190°C) oven or 2–3 minutes in a toaster oven. If using a regular pop-up toaster, toast to medium and then spread butter on the cut sides immediately.
Cook sausage patties
While the muffins are toasting, heat a nonstick or cast-iron skillet over medium heat. Add 1 teaspoon neutral oil to the pan. Place the two sausage patties in the skillet and cook 3–4 minutes per side, or until browned and cooked through (internal temperature 160°F / 71°C if using pork). Transfer patties to a plate and keep warm.
Make eggs
Wipe the skillet lightly with a paper towel if needed and reduce heat to medium-low. If you prefer round sandwich eggs, lightly oil or butter a round metal ring or use the warmed molded inside of an English muffin as a guide. For freeform eggs: crack two large eggs into a bowl and whisk with 1/4 teaspoon salt and a pinch of black pepper until combined. Pour eggs into the skillet and gently scramble or let set as fried: for folded/scrambled style cook slowly, stirring occasionally until just set, about 2–3 minutes. For fried style cook one egg at a time in the skillet or use a ring to make a circular fried egg; season with remaining salt and pepper and cook to desired doneness (sunny-side up 2–3 minutes, flipped for over-easy 30–45 seconds more).
Assemble sandwich
Place one toasted English muffin bottom on a plate. Top each bottom with a cooked sausage patty, then one cooked egg (or folded/scrambled portion), and one slice of American cheese. Place the muffin top on the sandwich. If you want the cheese melted, return the assembled sandwich to the warm skillet or oven for 30–60 seconds, or microwave for 10–15 seconds until cheese is melted.
Serve
Cut the sandwich in half if desired and serve immediately while hot.
