Prep
Bring ingredients to room temperature for 10 minutes if chilled. Wash and dry the lettuce leaves thoroughly. Wash the tomato and slice into four 1/4-inch (6 mm) thick slices. Pat the bacon dry if needed.
Cook bacon
Place a skillet over medium heat and lay the 4 slices of WestEnd premium bacon in a single layer. Cook 3–4 minutes per side, turning occasionally, until they reach your desired level of crispness. For extra-even cooking, press gently with a spatula. Transfer bacon to a plate lined with paper towels to drain fat.
Season tomato
Lay the 4 tomato slices on a small plate and sprinkle evenly with 1/4 tsp kosher salt and 1/4 tsp freshly ground black pepper to enhance flavor.
Assemble
Spread about 3/4 tbs mayonnaise on the unbuttered side of each toasted bread slice (total 1.5 tbs). On one slice, place the seasoned tomato slices in a single layer, then add the 2 lettuce leaves over the tomato. Top with the 4 slices of cooked WestEnd bacon, arranging so they slightly overlap. Place the second bread slice mayo-side down on top to finish the sandwich.
Finish and serve
Press the sandwich lightly, then cut diagonally or down the middle as preferred. Serve immediately while bacon is warm. Optional: serve with extra mayo, pickles, or chips on the side.
