Prepare aromatics

In a medium skillet over medium heat, melt 2 tablespoons unsalted butter. Add the finely diced onion and celery and cook, stirring occasionally, until softened and translucent, about 4–5 minutes. Add 1 teaspoon minced garlic and cook 30 seconds more until fragrant. Remove skillet from heat and allow to cool for 2 minutes.

Combine base ingredients

In a mixing bowl, whisk together 1/2 cup mayonnaise, 1 teaspoon Dijon mustard, 1 tablespoon fresh lemon juice, 1/2 teaspoon Worcestershire sauce, 1 teaspoon hot sauce, 1/2 teaspoon smoked paprika and 1/8 teaspoon cayenne. Taste and adjust heat by adding more hot sauce or cayenne if desired.

Fold in aromatics and crab

Fold the cooled onion-celery-garlic mixture into the mayonnaise mixture. Gently fold in 1 1/4 cups lump crab meat, taking care to keep large lumps intact. Add 2 tablespoons finely sliced chives and 1 tablespoon chopped parsley. Season with 1/2 teaspoon Kosher salt and 1/4 teaspoon freshly ground black pepper. Mix just until combined.

Chill briefly

Cover the bowl and refrigerate the filling for 20–30 minutes to let flavors meld and the mixture firm up slightly (this also makes it easier to portion).

While the filling chills, combine 2 tablespoons unsalted butter, 1/2 teaspoon minced garlic, 1/2 teaspoon hot sauce, 1/2 teaspoon lemon zest, 1/4 teaspoon smoked paprika and 1 teaspoon finely chopped parsley in a small heatproof bowl. Microwave for 15–20 seconds or melt in a small saucepan over low heat just until the butter is liquefied and the garlic becomes fragrant. Stir to combine.

Assembly & Finish

Portion filling

Remove crab filling from refrigerator. If serving on toasted bread or rolls, spoon about 1/3 to 1/2 cup of the crab mixture per slice/roll (adjust based on bread size). If making individual warm portions, mound filling into shallow ovenproof ramekins or onto a baking sheet lined with parchment.

Apply spicy butter

Brush or spoon the melted spicy butter evenly over the top of each portion of crab. This adds spice, gloss and helps with browning.

Finish (optional broil)

To warm and slightly brown the tops: preheat broiler on high (oven rack 6–8 inches from element). Place assembled portions or brioche slices on a baking sheet and broil 1.5–3 minutes, watching closely, until edges are golden and butter bubbles. Do not over-broil; crab should stay moist. Alternatively, warm in a 350°F (175°C) oven for 6–8 minutes until heated through.

Plate and serve

Place toasted brioche or rolls on plates, top with warmed crab mixture, and spoon any remaining spicy butter over top. Garnish with microgreens or arugula, extra chopped parsley, and lemon wedges. Serve immediately with extra hot sauce on the side.
