Rinse and soak rice

Place 2 cups glutinous rice in a fine-mesh sieve or bowl and rinse under cold water, stirring with your hand, until the rinse water runs mostly clear (about 3–4 rinses). Transfer to a bowl and cover with 4 cups cold water. Soak for 3–4 hours at room temperature or overnight in the refrigerator for best texture.

Drain and steam

After soaking, drain the rice thoroughly in a sieve for 10–15 minutes to remove excess water. Prepare a steamer (bamboo or metal) lined with cheesecloth or a clean towel. Bring water in the steamer pot to a boil, spread the drained rice in an even layer on the cloth, cover, and steam over medium-high heat for 20–25 minutes, stirring gently once halfway through to ensure even cooking. The rice should be translucent and tender but still slightly sticky.

Season

Transfer the steamed rice to a bowl and sprinkle 1 tsp kosher salt over it. Gently fold the salt through the rice with a rice paddle or spatula until evenly distributed. Allow the rice to cool for 10–15 minutes until it is warm but not piping hot — this helps it bind when pan-frying.

Heat pan

Heat a large nonstick or well-seasoned cast-iron skillet over medium heat. Add 3 tbs neutral oil and 1 tbs unsalted butter. Allow butter to melt and foam, and the oil to shimmer but not smoke.

Form rice cakes (optional) or spread

For an even, crispy exterior, you can either shape the warm rice into patties (divide into 6 equal portions and press each into a 3/4-inch-thick patty) or press the entire batch into the skillet as one large flat 'cake' about 1 inch thick. Either method works — patties are easier to flip, a single cake yields larger slices. If using optional mix-ins (mushrooms or shredded meat), fold them gently into the rice before shaping.

Pan-fry to crisp

Place the formed patties or single cake into the hot skillet, spacing patties so they do not touch. Cook undisturbed for 5–7 minutes until the underside is deeply golden-brown and crisp. Reduce heat to medium-low if browning too quickly. Carefully flip each patty (or invert the large cake in sections) and cook the other side for another 5–7 minutes until crisp and heated through. Total pan-frying time should be 10–14 minutes depending on thickness.

Flavor finish

Toward the last minute of cooking, drizzle 2 tbs soy sauce and 1 tsp sesame oil around the edges of the patties or cake so it sizzles into the crust (use a spoon to distribute evenly). Sprinkle 0.25 tsp coarse black pepper and 0.5 tsp optional chili flakes if using. Add 1 tbs unsalted butter (if desired) and let it melt into the crust for extra sheen.

Garnish and serve

Transfer the crispy rice to a cutting board or plate. Sprinkle with 2 tbs thinly sliced scallions and 1 tsp toasted sesame seeds. Serve hot, optionally topped with a fried egg or extra protein. Cut into wedges if using a single cake. Offer extra soy sauce or chili oil at the table.

Prepare mix-ins

If using mushrooms or cooked meat, sauté 1/2 cup diced mushrooms in 1 tsp oil until browned and any moisture evaporates (about 5–6 minutes). If using cooked chicken or pork, shred or dice into small pieces and warm briefly. Fold 1/2 cup total mix-ins into the warm steamed rice before shaping into patties or a cake.

Fried egg topping

Heat a small nonstick skillet over medium-high heat with 1 tsp oil. Crack 1 egg and fry to desired doneness (sunny-side up or over-easy recommended) and season with a pinch of salt. Place the fried egg on each rice patty or on top of the sliced rice cake before serving.
