Prepare eggplant

Trim & cut

Wash eggplants and trim the stem ends. Cut each eggplant lengthwise into 3–4 long strips (or into 1–1.5 cm thick rounds if preferred). Aim for uniform pieces so they cook evenly.

Salt and drain (optional)

Toss the cut eggplant with 1 tsp salt and let sit in a colander for 10–15 minutes to draw out bitterness and moisture. Pat dry with paper towels. This step reduces oil absorption and improves texture.

Cook eggplant

Heat a large nonstick or heavy skillet over medium-high heat. Add 3–4 tbsp vegetable oil and let it heat until shimmering. Add eggplant pieces in a single layer (work in batches if necessary). Pan-roast or shallow-fry, turning occasionally, until softened and lightly browned and edges are tender, about 6–8 minutes per batch. If you prefer a softer, silkier eggplant like Hong Kong restaurant style, cover the pan for 2–3 minutes partway through cooking to let steam assist.

Transfer

When cooked through and nicely browned, transfer eggplant to a plate lined with paper towel to absorb excess oil. Reserve the pan and any residual oil for the sauce.

Make sauce

Prep sauce mix

In a small bowl, combine 120 ml water or stock, 2 tbsp light soy sauce, 1 tbsp oyster sauce, 1 tbsp Shaoxing wine, 1 tsp hoisin sauce, 1 tsp dark soy sauce (optional), and 1 tsp sugar. Stir until sugar dissolves. In a separate small cup, mix 1 tsp cornstarch with 1 tbsp cold water to make a slurry; set aside.

Sauté aromatics

Wipe the skillet if there are burnt bits but keep about 1 tsp of oil and any flavorful residue. Add 1 tsp neutral oil if needed and heat over medium. Add minced garlic, minced ginger, chopped chili, and the white/light-green parts of the scallions. Stir-fry quickly until fragrant, about 30–40 seconds, taking care not to burn the garlic.

Deglaze & simmer

Add the prepared sauce mixture to the pan, scraping up any browned bits from the bottom. Bring to a gentle simmer for 1–2 minutes to marry flavors.

Thicken sauce

Stir the cornstarch slurry again, then pour it into the simmering sauce while stirring. Cook for 30–60 seconds until the sauce thickens to a glossy coating consistency. If the sauce becomes too thick, add a tablespoon or two of water/stock to loosen.

Combine & finish

Return the cooked eggplant (and any accumulated juices) to the skillet with the sauce. Gently toss and spoon the sauce over the eggplant to coat evenly. Simmer together for 1–2 minutes so the eggplant absorbs the sauce and is heated through.

Turn off the heat and drizzle 1 tsp toasted sesame oil over the dish. Toss lightly. Taste and adjust seasoning: add a pinch of salt or a splash more soy if needed.

Transfer to a serving plate and garnish with sliced green parts of scallions, a sprinkle of toasted sesame seeds, and cilantro if using. Serve hot with steamed rice.
