Clean and par-cook the crabs

Bring 4 liters of water to a rolling boil in a large pot. Add 2 tablespoons coarse sea salt. Holding each Dungeness crab by the back, submerge for 1 minute to par-cook and make meat easier to separate. Remove and let cool slightly until safe to handle.

When cool enough to handle, flip each crab over, remove the apron and gills, then split each crab in half through the center (top to bottom) with a heavy chef's knife or cleaver. Crack the claws slightly with the side of the knife or a mallet to allow sauce to penetrate.

Sauce & Aromatics

Prepare aromatics and sauce components

Mince the garlic, julienne the ginger, and slice the scallions separating whites from greens. In a small bowl combine light soy sauce, oyster sauce, Shaoxing wine, fish sauce, sugar and white pepper; set aside. Mix cornstarch with 1 tablespoon cold water to form a smooth slurry and keep ready.

Brown the butter and build flavor

In a large wok or heavy sauté pan over medium heat, melt 120 g unsalted butter with 2 tablespoons neutral oil. Continue cooking butter until it foams and begins to smell nutty and takes on a light golden color (browned butter) — about 2 to 3 minutes. Watch carefully so it doesn't burn. Reduce heat to medium-low.

Sauté aromatics

Add the minced garlic, julienned ginger, and the white parts of the scallions to the butter-oil mixture. Stir constantly for 45–60 seconds until fragrant and just beginning to color (do not let garlic burn).

Deglaze and form sauce

Increase heat to medium-high and add the Shaoxing wine to deglaze, scraping any browned bits. Add the soy-oyster-fish sauce mixture and the 120 ml chicken stock. Stir to combine and bring to a simmer.

Add crabs and finish

Carefully add the halved crabs, meat-side down, into the simmering sauce. Spoon sauce over the exposed meat. Cover and simmer gently for 6–8 minutes until crab meat is heated through and opaque (internal temperature not necessary for shellfish but ensure heated evenly).

Thicken and finish

Uncover, remove crab pieces briefly onto a platter and keep warm. Stir cornstarch slurry again, then add slowly to the simmering sauce while stirring. Cook 1 minute until the sauce thickens slightly and becomes glossy. Turn off heat and whisk in 1/2 teaspoon sesame oil. Taste and adjust seasoning (add a pinch of salt or a few drops of fish sauce if needed).

Return crab to the wok and toss gently to coat with the sauce. Sprinkle scallion greens over the top, scatter toasted sesame seeds and cilantro sprigs if using.

Serving

Serve the Hong Kong–style Dungeness crab hot, family-style on a large platter with steamed jasmine rice and lime wedges on the side. Provide crab crackers or small forks for extracting meat. Leftover sauce is excellent spooned over rice.
