Preparation
If using live crabs, humanely dispatch and rinse under cold water. Remove top shell, rinse out gills and guts, then halve or quarter depending on size. Crack the claws lightly with the back of a knife so sauce can penetrate. Pat dry with paper towels.
Measure and prepare all aromatics: julienne ginger, mince garlic, slice onion, and cut spring onions into 2-inch lengths. Have stock warm and cornstarch slurry ready (mix cornstarch with cold water until smooth).
Cooking
Stage 1 — Sear the crab
Heat a large heavy skillet or wok over high heat until very hot. Add 2 tablespoons of oil and swirl. Add the crab pieces in a single layer, shell-side down; work in batches if necessary. Sear for 1¼–2 minutes until shells develop color, then flip and sear briefly on the meat side (about 30–45 seconds). Remove crab to a plate.
Stage 2 — Build the aromatics
Wipe out the pan if it has burned bits, add remaining 2 tablespoons oil and reduce heat to medium-high. Add ginger and stir-fry 20–30 seconds until fragrant. Add sliced onion and continue stir-frying 30–45 seconds until it softens. Add minced garlic and cook another 15–20 seconds, taking care not to burn the garlic.
Stage 3 — Deglaze and simmer
Add Shaoxing wine to deglaze the pan, scraping any browned bits. Stir in light soy sauce, oyster sauce, fish sauce, and sugar. Pour in the hot stock and bring to a simmer.
Stage 4 — Combine and finish
Return the seared crab pieces to the pan, spooning sauce over them. Cover and simmer gently for 5–7 minutes until crab is cooked through (meat opaque and juices run clear). Uncover, stir in white pepper, and skim any excess foam. Stir the cornstarch slurry again and slowly pour into the simmering sauce while stirring; sauce will thicken in 1–2 minutes to a glossy coating. Taste and adjust seasoning with a splash more soy or fish sauce if needed.
Stage 5 — Final aromatics and garnish
Turn off the heat and add sesame oil, toss in spring onion pieces (reserve a few for garnish) and cilantro if using. Transfer crab and sauce to a serving platter and sprinkle crispy fried shallots or garlic on top. Garnish with remaining spring onions and serve immediately with steamed rice.
