Prepare the pumpkin
Preheat oven to 375°F (190°C). Wash the pumpkin, trim a thin slice from the bottom so it sits flat. Cut a 2–3 inch lid from the top and reserve. Scoop out seeds and fibrous strands; reserve seeds for toasting if desired. Use a spoon to scrape the interior walls clean so filling will seat evenly.
Bake the pumpkin
Brush the interior and cut surfaces lightly with 1 tablespoon melted butter and a pinch of salt. Place the pumpkin and lid on a rimmed baking sheet lined with parchment or foil. Roast 35–50 minutes, depending on pumpkin size, until a paring knife slips easily into the flesh but the shell still holds shape. Remove from oven and let cool slightly (10–15 minutes) until warm but safe to handle.
Make the custard base
While pumpkin bakes, whisk together 4 egg yolks and 1 tablespoon granulated sugar in a medium bowl until smooth and slightly pale. In a saucepan, combine 1 cup heavy cream, 1 cup whole milk, 2 tablespoons brown sugar, 1 teaspoon vanilla, 1 teaspoon cinnamon, 1 teaspoon ginger, 1/4 teaspoon nutmeg, and 1/2 teaspoon salt. Warm over medium heat until steam appears and small bubbles form at the edge, but do not boil.
Temper and thicken
Slowly ladle about 1/3 cup of the hot cream into the egg yolks while whisking constantly to temper. Then gradually pour the tempered yolk mixture back into the saucepan, whisking. Stir in 1 cup pumpkin purée and 1 teaspoon cornstarch (sifted) to ensure smoothness. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 3–5 minutes. Do not boil. Remove from heat and strain through a fine-mesh sieve into a clean bowl to remove any curdled bits. Taste and adjust salt or spices.
Fill the pumpkin
Ladle the warm custard-pumpkin filling into the baked pumpkin cavity, leaving about 1/4–1/2 inch headspace (filling will set more). Wipe rim clean and replace the lid.
Bake to set
Return the filled pumpkin to the oven at 350°F (175°C) and bake 20–30 minutes until the custard is just set around the edges but slightly jiggly in the center (it will continue to firm as it cools). For a brighter yolk-like surface, in the last 5 minutes brush the top lightly with beaten egg white and sprinkle 1 tablespoon brown sugar, then broil for 1–2 minutes until caramelized — watch closely to avoid burning.
Cool and rest
Remove from oven and let rest at room temperature 30 minutes, then chill in refrigerator 1–2 hours (or overnight) to fully set the filling. Chilling concentrates flavors and gives a custard-like texture.
Finishing & Garnish
Toast pepitas: While the custard chills (or beforehand), toast 1/4 cup pepitas in a dry skillet over medium heat, stirring, until fragrant and lightly browned, about 3–4 minutes. Coarsely chop and set aside.
Unmold and serve: Remove the pumpkin from refrigerator. To serve, scoop wedges of the pumpkin with filling into bowls or cut into slices with a sharp knife. Sprinkle toasted pepitas over each portion and scatter chopped fresh herbs if using. For a dessert-style presentation, drizzle with a little warm caramel or melted brown sugar glaze; for savory approach, add a pinch of flaky salt and a drizzle of browned butter.
Storage: Cover and refrigerate leftovers up to 3 days. Rewarm gently in a 300°F (150°C) oven for 10–15 minutes if serving warm; avoid reheating too long or the custard will overcook.
