Prepare Lobster
Humanely kill and split
Bring a large pot of salted water to a rolling boil. Place the live lobster in the freezer for 10–15 minutes to calm it. With a sharp chef's knife, place the lobster on a cutting board, head toward you. Insert the knife quickly down the center of the head to split the lobster in half lengthwise. Remove the tomalley (green part) if you prefer. Reserve the lobster shells for stock if desired. Pat the lobster meat dry with paper towels. Cut the tail meat into 1–1½ inch chunks and crack the claws to expose meat; leave in shell pieces for presentation.
Season the lobster pieces lightly with 1/4 tsp salt and a pinch of white pepper. Set aside.
Aromatics & Sauce
Heat oil and butter
In a large skillet or wok over medium-high heat, add 3 tbs vegetable oil and 2 tbs unsalted butter. Heat until butter foams and oil shimmers but does not smoke.
Sear lobster briefly
Add the lobster tail chunks and cracked claw pieces, meat-side down. Sear 30–45 seconds just to color the surfaces — you want to build flavor but not overcook. Remove lobster and set on a plate; keep juices in the pan.
Cook aromatics
Reduce heat to medium. Add the julienned ginger, the white parts of the sliced green onions, and the sliced garlic to the pan. Sauté, stirring constantly, for 45–60 seconds until fragrant and the ginger begins to soften but not brown.
Deglaze and build sauce
Add 2 tbs Shaoxing wine to deglaze, scraping browned bits from the pan with a wooden spoon. Immediately add 120 ml chicken or seafood stock, 2 tbs light soy sauce, 1 tbs oyster sauce, and 1 tsp granulated sugar. Stir to combine and bring to a gentle simmer.
Return lobster & finish cooking
Return the lobster pieces and any accumulated juices to the pan. Simmer 2–3 minutes, spooning sauce over the meat, until lobster is opaque and cooked through (internal temp about 140°F/60°C). Do not overcook — lobster cooks quickly.
Thicken sauce
Mix 1 tsp cornstarch with 1 tbs cold water to make a slurry. Stir the slurry into the simmering sauce and cook 30–45 seconds until sauce thickens and glosses. Stir in 1 tsp sesame oil, 1/4 tsp white pepper, and adjust salt to taste (use remaining 1/4 tsp if needed).
Finish & Serve
Transfer lobster and sauce to a warmed serving platter. Spoon the ginger-onion sauce over the lobster, scatter the green parts of the sliced scallions and cilantro leaves on top. Serve immediately with lime wedges on the side and steamed rice or noodles.
