Filling
Soften and mix cream cheese
Place the 8 oz cream cheese in a mixing bowl. Let it sit at room temperature for 15–20 minutes until softened, or microwave in 5–7 second bursts until just spreadable. Stir until smooth.
Prepare crab and aromatics
Finely chop the imitation crab (or flake real crab) into small pieces so the filling packs well. Thinly slice the green onions and mince the garlic.
Combine filling ingredients
To the softened cream cheese add the chopped crab (6 oz), 2 tbsp sliced green onions, 1 tsp minced garlic, 1 tsp soy sauce, 1 tsp Worcestershire sauce, 1 tsp sugar, and 1 tsp freshly ground black pepper. Mix thoroughly with a spatula until evenly combined and smooth. Taste and adjust seasoning (add a pinch more sugar or a few drops of soy if needed). Refrigerate the filling for 10 minutes to firm slightly — this makes wrapping easier.
Wrappers & Assembly
Prepare egg wash
Crack 1 large egg into a small bowl and whisk with 1 tbsp water until uniform. This will act as glue for sealing the wontons.
Portion filling
Set out 24 wonton wrappers on a clean, dry work surface with the seams parallel. Using a small cookie scoop or teaspoon, place about 1 level teaspoon (approximately 10–12 g) of filling in the center of each wonton wrapper. Avoid overfilling to ensure proper sealing and frying.
Fold classic triangle (or purse) shape
Option A — Triangle: Lightly brush the edges of the wrapper with egg wash. Fold the wrapper into a triangle, pressing out any air and sealing edges firmly. Option B — Purse: Place filling in center, brush all four edges with egg wash, bring all four corners together over the filling, pinch to seal and remove excess air. Make sure seals are tight and there are no gaps. Repeat for all wrappers.
Rest before frying
Place the assembled Crab Rangoons on a parchment-lined tray in a single layer, seam-side down. If not frying immediately, cover loosely with plastic wrap and refrigerate for up to 1 hour. For best results, chill 10–15 minutes to help them hold shape.
Frying
Heat oil
Pour about 3–4 cups of neutral oil into a heavy-bottomed pot or deep skillet, leaving at least 2 inches of headspace. Heat the oil over medium-high heat until it registers 350°F (175°C) on a deep-fry thermometer. If you don't have a thermometer, test with a small piece of wrapper — it should sizzle and become golden in about 30–45 seconds.
Fry in small batches
Working in batches of 6–8 to avoid overcrowding, gently lower the prepared Crab Rangoons into the hot oil seam-side up using a slotted spoon or spider. Fry for 1.5–2.5 minutes, turning once, until they are golden brown and crisp. Cooking time will vary slightly depending on size and oil temperature.
Drain and keep warm
Using a slotted spoon, remove the rangoons and drain on a wire rack set over a baking sheet or on paper towels. If desired, keep cooked rangoons in a 200°F (95°C) oven on a tray to keep warm while frying remaining batches (do not stack).
Safety and oil adjustments
Monitor oil temperature and adjust heat to maintain roughly 325–350°F (160–175°C). If oil gets too hot, lower the heat slightly to prevent burning the wrappers before the filling heats through.
Dipping Sauce & Serving
Prepare or serve sauce
Place 1 cup sweet chili sauce in a small bowl for serving. Offer soy sauce on the side if guests prefer a saltier dip.
