Prepare fish maw

If your fish maw is dried, soak it in warm water for 3–6 hours or in hot water for 30–60 minutes until softened. Rinse, trim away any tough edges, and cut into 1–1.5 inch pieces. If already pre-soaked, trim and cut directly.

Aromatics

Peel and lightly crush the ginger with the flat of a knife and slice into 2–3 pieces to release flavor.

Simmer broth

In a medium-large pot, bring the 6 cups chicken stock to a gentle simmer over medium heat. Add the prepared fish maw, crushed ginger pieces, and 1 tablespoon shaoxing wine. Reduce heat to low and simmer gently for 20–25 minutes until the fish maw is tender and has absorbed some broth flavor.

Season

After simmering, remove and discard the ginger pieces. Stir in 1 teaspoon salt and 1 teaspoon white pepper. Taste and adjust seasoning gently — remember crab meat is delicate and slightly sweet, so avoid over-salting.

Prepare crab meat

While the broth simmers, pick through the crab meat to remove any shell fragments. Keep the lumps intact as much as possible for texture. If the crab is very wet, pat lightly with paper towel.

Egg white preparation

Lightly beat the 2 egg whites in a small bowl just until frothy (do not over-beat). This will be used to add silkiness to the soup.

Add crab to broth

When the fish maw is tender and the broth is seasoned, increase the heat to a gentle simmer (not a rolling boil). Add the crab meat in batches, folding gently with a spoon so lumps remain. Cook for 2–3 minutes until the crab is heated through and opaque.

Finish with egg whites

Reduce heat to low. Slowly drizzle the beaten egg whites into the pot in a thin stream while stirring the broth gently in one direction to create delicate ribbons. Cook 30–45 seconds to set the egg white ribbons.

Cornstarch slurry

In a small cup, whisk 2 teaspoons cornstarch with 2 tablespoons cold water until smooth to make a slurry.

Thicken soup

With the soup at a gentle simmer, slowly stir in the cornstarch slurry. Continue to simmer for 1–2 minutes until the soup slightly thickens and becomes glossy. If you prefer thinner soup, omit or halve the cornstarch.

Finish seasoning & aromatics

Stir in 1 teaspoon sesame oil and the sliced green parts of the scallions. Adjust white pepper and salt to taste. Remove from heat immediately to preserve crab texture.
