Cook the Pasta

In a large pot, bring salted water to a boil. Add the campanelle pasta and cook according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce

In a large saucepan, melt the butter over medium heat. Add the flour and whisk constantly for about 1-2 minutes until it forms a roux. Gradually whisk in the milk and heavy cream, cooking until the mixture thickens.

Add Cheese

Remove the saucepan from heat and stir in the cheddar and Gruyère cheeses until melted and smooth. Add salt, black pepper, and tarragon to taste.

Combine Pasta and Lobster

Fold the cooked pasta and chopped lobster into the cheese sauce until well combined.

Prepare Breadcrumb Topping

In a small bowl, mix the breadcrumbs with olive oil, salt, and pepper. Mix well until the breadcrumbs are coated.

Bake

Preheat the oven to 350°F (175°C). Transfer the lobster mac and cheese mixture to a greased baking dish. Sprinkle the breadcrumb topping evenly over the top. Bake for 25-30 minutes, or until the top is golden and bubbly.
