Prepare the Chicken
Flatten the chicken breasts to an even thickness using a meat mallet. Marinate in olive oil, salt, pepper, and garlic powder for at least 30 minutes.
Assemble the Cordon Bleu
On each chicken breast, layer 2 slices of black forest ham and 2 slices of Swiss cheese. Fold the chicken over to encase the fillings and secure with toothpicks if needed.
Grill the Chicken
Preheat the grill to medium-high heat. Cook the chicken for about 6-8 minutes on each side, or until fully cooked and the cheese has melted.
Toast the Brioche
While the chicken is grilling, toast the brioche slices until golden brown.
Serve
Spread dijonaise on the toasted brioche, place the grilled chicken on top, and serve with your choice of side.
