Prepare
Chill an Old Fashioned glass (rocks glass) by filling it with ice and setting aside. If using fresh lemon, squeeze and measure 3 tablespoons (about 0.75 oz per tablespoon) of juice and strain out seeds and pulp.

Dry Shake (if using egg white)
In a cocktail shaker, combine 2 oz bourbon, 3 tbs fresh lemon juice, 1 tbs simple syrup, and 1/2 egg white. Do a vigorous dry shake (no ice) for 10–15 seconds to emulsify and build a frothy head.

Wet Shake
Add a generous handful of ice (about 1 cup) to the shaker. Seal and shake vigorously for 10–15 seconds until the shaker is cold to the touch and well chilled.

Strain and Serve
Dump the ice from the chilled glass. Double-strain the cocktail into the glass over fresh ice using a Hawthorne strainer and, if available, a fine mesh strainer to catch small ice shards and egg white solids.

Finish
Add 2 dashes of Angostura bitters on top of the foam (if egg white used). Garnish with a lemon wheel (or half-moon) and a maraschino cherry. If no egg white was used, simply stir briefly in the shaker after wet shaking and strain over fresh ice, then add bitters and garnish.

Serve immediately and enjoy. Adjust sweetness with more or less simple syrup to taste.
