Prepare watermelon

    Wash and dry

    Rinse the outside of the watermelon under cool running water and pat dry with a clean towel to remove any dirt or residue.

    Cut into portions

    Place the watermelon on a large cutting board. Use a sharp chef’s knife to cut off both ends to create flat surfaces. Stand the melon on one flat end and slice downward to remove the rind in strips, following the curve of the fruit until all green and white rind are removed. Alternatively, halve the melon crosswise if you prefer wedges with rind.

    Cube or slice

    For cubes: lay the de-rinded watermelon on its side and slice into 1–1½ inch thick slabs, then cut those slabs into 1–1½ inch sticks and cross-cut into cubes. For wedges: cut the halved melon into 1–2 inch thick wedges. For balls: use a melon baller to scoop uniform spheres.

    Remove seeds (if any)

    If you encounter any seeds, use the tip of the knife or a spoon to pop them out. Discard seeds and any fibrous white sections.

    Simple chilled serving

    Transfer the prepared watermelon to a serving bowl or platter. Chill in the refrigerator for 15–30 minutes if you prefer it extra cold, then serve.

    Lime and mint

    If using lime and mint: roughly chop or chiffonade the mint leaves. Zest then squeeze the lime over the watermelon pieces, drizzle with honey or agave if desired, and sprinkle the mint leaves on top. Gently toss to combine and serve immediately.

    Savory feta salad

    If using feta and salt: arrange the watermelon cubes or wedges on a platter, crumble the feta evenly over the top, sprinkle the coarse sea salt lightly (start with ½–1 tsp, adjusting to taste), and scatter mint leaves. Drizzle a small amount of honey or a light vinaigrette if you like. Serve chilled.

    Storage

    Store any leftover cut watermelon in an airtight container in the refrigerator for up to 3–4 days. Note that texture and sweetness decline over time. Do not store with strong-smelling foods, as watermelon absorbs odors.
