    Prepare and chill glass

    Place a coupe or martini glass in the freezer for a few minutes or fill it with ice water to chill while you build the cocktail.

    Dry shake (if using egg white)

    If using egg white, combine gin, dry vermouth, peach liqueur, maraschino, lemon juice, simple syrup, and the egg white in a cocktail shaker without ice. Dry-shake vigorously for 15–20 seconds to emulsify and build a frothy texture.

    Shake with ice

    Add the ice cubes to the shaker. Shake vigorously for 12–15 seconds (or 8–10 seconds if you skipped the dry shake) until the shaker is cold to the touch and well diluted.

    Double strain

    Discard the ice or water from the chilled glass. Using a Hawthorne strainer and a fine mesh strainer, double-strain the cocktail into the chilled coupe or martini glass to catch ice shards and any solids from the egg white.

Garnish & Finish

    Express the oils of a lemon or orange twist over the surface of the cocktail by holding the twist skin-side down and giving it a sharp bend above the drink. Run the twist around the rim if desired, then drop it into the glass or hang on the rim. Optionally, add a maraschino cherry on a pick and rest it on the rim or drop it in.
