Make the chipotle mayo
In a small bowl, combine 1/4 cup mayonnaise, 1 tsp finely chopped chipotle in adobo, 1/2 tsp adobo sauce, 1/2 tsp lime juice, 1/4 tsp honey (if using) and 1/8 tsp salt. Whisk until smooth and taste; adjust heat with more chipotle or adobo sauce if desired. Set aside in the refrigerator while you prepare other components.

Prepare the purée
Halve and pit 1 ripe avocado, scoop the flesh into a bowl and mash with a fork until mostly smooth with a little texture. Stir in 1 tbsp lime juice, 1 tsp olive oil, 1/2 tsp minced garlic, 1/4 tsp salt and 1/4 tsp black pepper. Taste and adjust seasoning. If you prefer a smoother purée, pulse briefly in a mini-food processor or blender. Keep covered to prevent browning.

Toast the sourdough
Melt 1 tbsp unsalted butter in the same skillet over medium heat. Add 2 slices sourdough and toast 1–2 minutes per side, or until golden and crisp. Alternatively, toast in a toaster and spread butter on one side after toasting.

Assemble
Spread a generous tablespoon of chipotle mayonnaise on the bottom slice of toasted sourdough. Spread about 2–3 tbsp avocado purée on the top slice (or vice versa, as preferred). Layer 2 slices cooked smoked turkey bacon on the bottom slice, then place 2 tomato slices on top of the bacon. Season tomatoes lightly with a pinch of salt and a grind of black pepper (about 1/8–1/4 tsp combined). Top with 1 cup packed arugula. Close the sandwich with the top slice of sourdough, avocado-side down.
