Roasted Salmon

Preheat & prepare
Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with foil or parchment and set a wire rack on top if you have one (helps with even roasting). Pat salmon fillets dry with paper towels and place skin-side down on the prepared sheet.

Make the glaze
In a small bowl combine 2 tbs olive oil, minced garlic, lemon zest and 2 tbs lemon juice, chopped dill, honey (or maple), Dijon, 1 tsp salt and 1/2 tsp black pepper. Whisk until combined.

Roast
Place the salmon in the preheated oven and roast 10–12 minutes for medium (internal temperature ~125–130°F / 52–54°C) depending on thickness. For well done, roast 13–15 minutes. Remove from oven when edges are opaque and center is just cooked; the residual heat will finish it. If you like the top slightly caramelized, broil 1–2 minutes at the end — watch closely.

Rest
Let the fillets rest 3 minutes on the baking sheet. Finish with a light drizzle of 1 tsp olive oil, a sprinkle of extra chopped dill or parsley, and serve with a lemon wedge.

Heat dairy
While potatoes cook, warm the 1/2 cup milk, 2 tbs heavy cream (if using) and 4 tbs butter in a small saucepan or microwave until butter is melted and mixture is hot but not boiling. This ensures smooth whipped potatoes.

Whip
Using a potato ricer, masher, or the large holes of a box grater, process the potatoes until broken up. Add softened cream cheese (if using) and pour in the warmed milk/butter mixture a little at a time while stirring or whipping with a hand mixer on low. Continue until potatoes are smooth and silky but still hold shape. Season with 1 tsp salt and 1/2 tsp pepper; taste and adjust.

Finish & keep warm
Fold in half the chopped chives, reserving the rest for garnish. Keep covered in a warm spot or in a low oven (200°F / 95°C) until ready to plate — do not overheat or they will dry out. If needed, stir in an extra tablespoon of milk or butter to loosen before serving.
Plating & Serving

Spoon a generous portion of whipped potatoes onto each plate, creating a shallow well. Place a roasted salmon fillet on top or beside the potatoes. Spoon any pan juices from the salmon over the fillet. Garnish potatoes with remaining chives and the salmon with extra dill or parsley. Serve immediately with a lemon wedge on the side.
