Prepare and dry shake
Add pisco, fresh lime juice, simple syrup and the egg white to a cocktail shaker (no ice). Seal and dry-shake vigorously for 10–15 seconds to emulsify the egg white and create foam.

Shake with ice
Open the shaker, add 4 large ice cubes, reseal and shake hard for 12–15 seconds until the shaker is very cold to the touch and contents are well chilled.

Strain
Double-strain (use a Hawthorne or fine mesh strainer if available) into a chilled coupe or small cocktail glass. The surface should have a thick, glossy foam from the egg white.

Finish with bitters and garnish
Carefully drop 2 dashes of Angostura bitters onto the foam. Optionally, use a toothpick to make a small decorative pattern by dragging the bitters into a few concentric shapes. Garnish the rim with a lime wheel or wedge.

Serve immediately while foam is fresh and aromatic. If desired, provide a small stirring straw for guests to gently mix before sipping.
