Chill glass
Place a stemmed wine glass or large tulip glass in the freezer for 5–10 minutes, or fill it with ice and water to chill while you prepare ingredients.

Add ice
If you prefer your drink very cold, add one large ice cube or a small handful of fresh ice to the glass. For a lighter chill and less dilution, omit the ice.

Top with sparkling rosé
Slowly pour 4 oz sparkling rosé down the side of the glass so it mixes gently with the Italicus without losing too much carbonation.

Add elderflower tonic
Carefully top with 2 oz chilled elderflower tonic. Pour gently to retain bubbles and to layer a subtle floral note without overpowering the sparkling wine.

Stir gently
Using a bar spoon, give the drink 1–2 gentle turns to integrate the Italicus and tonic with the sparkling rosé. Avoid vigorous stirring to preserve effervescence.
