Champagne & Sparkling Wine

Prepare glassware

Chill glass
Place two champagne flutes in the refrigerator for 10–15 minutes or fill briefly with ice water while preparing ingredients; empty and dry just before pouring.
Juice & strain

Roll whole oranges on the counter with light pressure to loosen juices. Cut oranges in half and use a hand juicer or reamer to extract juice until you have 1 cup total (about 2–3 medium oranges).

Optional: Strain the juice through a fine mesh sieve into a measuring cup to remove pulp and seeds for a smoother drink.
Assemble Mimosas

Hold each chilled flute at a slight angle and pour 1/2 cup (120 ml) of chilled orange juice into each glass. Classic ratio is 1:1 orange juice to sparkling wine, but adjust to taste.

If desired, garnish each glass with an orange slice or twist on the rim and drop a raspberry or sliced strawberry into the drink for color.
Serve

Serve immediately while sparkling wine is still effervescent. Enjoy chilled.
