    Prepare glass

    Chill an old-fashioned glass (rocks glass) by filling it with ice and set aside while you build the cocktail, or place in the freezer for a few minutes.

    Add ingredients to shaker

    Into a cocktail shaker add 2 oz rye whiskey, 0.5 oz fresh lime juice, 0.5 oz allspice (pimento) dram, 0.25 oz simple syrup, and 2 dashes Angostura bitters.

    Add ice and shake

    Add about 1 cup of ice to the shaker. Secure the lid and shake vigorously for 12–15 seconds until the shaker is cold to the touch and well chilled.

    Prepare serving glass

    Discard the ice from the chilled old-fashioned glass and add a single large ice cube (or several fresh chilled ice cubes).

    Strain

    Double-strain the cocktail from the shaker into the prepared glass over the large ice cube using a Hawthorne or fine mesh strainer to catch any small ice shards and pulp.

    Garnish

    Express the oils from an orange peel over the surface of the drink by holding the peel skin-side down over the glass and quickly bending it to release the oils. Rub the peel around the rim if desired, then drop it into the drink as garnish.

    Serve

    Serve immediately. Sip and enjoy the warm spice of the allspice dram balanced by rye and brightened by lime and bitters.
