Chill
Start with well-chilled kombucha. Place the bottle in the refrigerator at least 1 hour before assembling to preserve carbonation and bright flavors.

Measure 3 cups of chilled kombucha into a large measuring glass or pitcher. Pour in the 4 tablespoons of your chosen clear spirit (vodka, gin, or white rum), 1 tablespoon fresh citrus juice, and 1 teaspoon simple syrup or honey syrup. Stir gently 6–8 times to combine without losing too much fizz.

Prepare flavor boosters: lightly muddle 6 mint leaves with the sliced or grated ginger (1 tsp) and cucumber slices (4) in the bottom of a mixing glass or small bowl to release aromatics. Do not over-muddle — press just enough to bruise the mint and release juices from the cucumber.

If using berries, gently smash 6 berries against the side of the mixing glass to release juices and add to the muddled herbs. Add the muddled mixture to the kombucha-spirit base, then taste. If you prefer more brightness or sweetness, add an additional 1/2 teaspoon simple syrup or another 1/2 tablespoon citrus juice.

If using bitters, add a small dash (about 1 teaspoon) to deepen flavor complexity. Stir gently to integrate, keeping carbonation in mind.

Fill two tall glasses with the ice (about 1 cup per glass). Strain the kombucha-cocktail mixture over the ice to avoid large bits of muddled herbs and seeds. Divide the mixture evenly between the two glasses.
