Bring roast to room temperature
Remove the prime rib from the refrigerator 45–60 minutes before cooking so it comes closer to room temperature. Pat dry with paper towels.

Preheat oven to 450°F (230°C). Place a rack in a shallow roasting pan.

Initial sear-roast
Place the roast fat-side up on the rack in the roasting pan. Roast at 450°F (230°C) for 10 minutes to develop a crust.

Reduce heat and finish
Reduce oven temperature to 325°F (165°C). Continue roasting until the internal temperature reaches 120°F (49°C) for medium-rare or 125–130°F (52–54°C) for medium (kids often prefer slightly less pink). For a 1.5 lb small roast, this will typically take 25–35 minutes after the initial sear. Start checking temperature at 20 minutes with an instant-read thermometer inserted into the thickest part away from bone.

Rest
Transfer roast to a cutting board and tent loosely with foil. Rest 15–20 minutes; carryover cooking will raise the internal temperature a few degrees. Resting allows juices to redistribute and keeps slices moist — important for kids' portions.

Slice into kid portions
Remove any small bones if present. Slice roast into 1/2-inch thick 'kids cut' portions (about 4–6 slices from a 1.5 lb roast depending on size). Arrange on a warm plate and sprinkle a pinch of parsley if using.

While the roast is in the oven, wash and peel the potatoes (peel optional). Cut into 1/4 to 1/3-inch sticks for classic fries. Rinse well under cold water until the water runs clear to remove excess starch.

Pat the potato sticks completely dry with clean kitchen towels or paper towels. Toss with 2 tbsp oil, kosher salt, black pepper and paprika, ensuring an even coating.

Two cooking options
Choose frying for crispier fries or baking for an easier, kid-friendlier method. Frying: Heat 1–2 inches of vegetable oil in a heavy skillet or pot to 350°F (175°C). Fry potatoes in batches 3–4 minutes until golden and tender. Drain on paper towels and season with a little extra salt while hot. Baking (oven): Spread fries in a single layer on a parchment-lined baking sheet without overcrowding. Bake at 425°F (220°C) for 20–25 minutes, flipping once halfway through, until golden and crisp at the edges. For extra crispness, start on a hot baking sheet and finish under the broiler 1–2 minutes while watching carefully.

Keep warm
If fries finish before the roast, keep them warm on a baking sheet in a 200°F (95°C) oven for up to 15 minutes so they stay crisp.
