Prep kale
Strip the kale leaves from their tough stems. Stack the leaves, roll or bunch them, then thinly slice into bite-size ribbons. Place the chopped kale in a large bowl.

Massage kale
Sprinkle 1/4 teaspoon of salt over the kale and drizzle 1 tablespoon of olive oil (from dressing amount) or a small splash of lemon juice. Massage the leaves for 1–2 minutes until the leaves soften and darken. This reduces bitterness and improves texture.

Prepare fruit and nuts
Core and thinly slice the apples; toss slices in a small bowl with the lemon juice (1 tsp) reserved to prevent browning if desired. Halve the grapes. Toast the walnuts in a dry skillet over medium heat, shaking the pan and stirring often, 3–4 minutes until fragrant and lightly browned; remove and cool, then roughly chop.

Assemble salad
Add the sliced apples, halved grapes, chopped toasted walnuts and 1/2 cup shaved manchego to the massaged kale. Add chopped parsley if using. Season with the remaining 1/4 teaspoon sea salt and 1/4 teaspoon black pepper. Toss gently to combine and distribute ingredients.
Manchego Maple Dijon Dressing

Combine the wet ingredients: in a small bowl or jar, whisk together 2 tablespoons apple cider vinegar, 1 tablespoon Dijon mustard, 1 tablespoon pure maple syrup, 1 teaspoon fresh lemon juice, and 1/2 teaspoon minced garlic until smooth.

Finish and season: Stir in 2 tablespoons finely grated manchego into the dressing. Taste and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper. If you prefer a tangier or thicker dressing, add up to 1 teaspoon more Dijon mustard or a pinch more salt.

Rest: Let the dressing sit 5–10 minutes at room temperature so the manchego softens into the dressing and flavors meld. Give it a final whisk or shake before using.
To Serve

Dress the salad: Drizzle about half to three-quarters of the dressing over the assembled salad (start with ~2–3 tablespoons), toss gently to coat evenly. Add more dressing to taste—about 3–4 tablespoons total is typical for this quantity of greens.

Finish and plate: Taste and adjust seasoning with additional salt and pepper if needed. Garnish with remaining shaved manchego and a few walnut pieces and grape halves for visual appeal. Serve immediately.

Make-ahead note: You can toast walnuts and slice apples up to 1 day ahead (keep apples tossed with lemon). Keep dressing refrigerated and kale un-dressed; combine and toss 10–15 minutes before serving so kale has time to absorb dressing.
