    Chill a coupe or Nick & Nora glass by filling it with ice and setting aside, or place it in the freezer for a few minutes.

    Measure and combine

    Into a mixing glass or Boston shaker filled about two-thirds with ice, pour 1 oz sweet vermouth, 1 oz Cynar (or your chosen amaro), and 1 oz gin.

    Stir to chill and dilute

    Using a bar spoon, stir the mixture for 20–30 seconds (about 20–30 full turns) until well chilled and properly diluted. The liquid should be very cold and slightly viscous from dilution.

    Prepare glass and garnish

    Dump the ice from the chilled coupe or Nick & Nora glass. If using angostura bitters, add 1 dash to the surface of the stirred cocktail and gently give one short stir to marry the aroma (optional). Express an orange peel over the drink by holding it with the outside facing down and giving it a sharp twist to spray oils across the surface; rim the glass with the peel and drop it into the drink as garnish.

    Strain and serve

    Double-strain or fine-strain the cocktail from the mixing glass into the chilled coupe. Serve immediately.

    Return any unused ice to the freezer, rinse your mixing glass and spoon, and wipe down the bar area.
