    Chill the glass

    Place a coupe or martini glass in the freezer or fill it with ice water while you prepare the cocktail to ensure the finished drink is nicely chilled.

    Combine ingredients

    In a mixing glass add plenty of ice (about 8 medium cubes). Pour in 2 oz aged gin and 1 oz sweet vermouth. Add 1/4 teaspoon (a barspoon) of Fernet-Branca. The Fernet is a bright, bitter accent — a little goes a long way.

    Stir

    Using a long bar spoon, stir the mixture briskly for 20–30 seconds (about 15–20 full turns) until the mixing glass is well chilled and slightly diluted (the spoon should feel cold and the liquid slightly viscous). Stirring, not shaking, preserves clarity and silky texture.

    Prepare the glass

    If you used ice water to chill the glass, dump it out now. Strain the chilled cocktail through a hawthorne or julep strainer into the chilled coupe or martini glass.

    Express the orange twist

    Hold an orange twist about 2–3 inches above the glass, peel-side down. Gently squeeze to express the oils over the surface of the drink, then rub the peel around the rim and drop it into the cocktail as garnish.

    Serve immediately. The classic Hanky Panky is balanced, slightly sweet from the vermouth with an herbal, bitter lift from the Fernet and bright citrus aromatics from the orange twist.
