    Score and season

    Pat the duck breasts dry with paper towels. Using a sharp knife, lightly score the skin in a diamond pattern without cutting into the meat. Season both sides with kosher salt and freshly ground black pepper; set aside for 10 minutes at room temperature.

    Render skin and sear

    Place a cold skillet (preferably cast-iron) over medium-low heat. Place the duck breasts skin-side down in the skillet without oil. Cook slowly for 8–12 minutes, allowing the fat to render and the skin to become deep golden and crisp. Spoon off excess fat into a small bowl as it accumulates, leaving enough to crisp the skin. If the skin is browning too quickly, reduce heat.

    Finish in pan

    When the skin is well browned and most fat is rendered, pour off all but about 1 tablespoon of fat. Turn the breasts skin-side up, add 1 tbs neutral oil around the meat if needed, and increase heat to medium-high. Sear the meat side 1–2 minutes to develop color.

    Bake to temperature

    Transfer skillet to a 400°F (200°C) oven or continue on stovetop with a lid and very gentle heat. Cook until an instant-read thermometer reads 135°F (57°C) for medium-rare (about 5–8 minutes in oven depending on thickness). Remove to a cutting board and tent loosely with foil; rest 8–10 minutes (carry-over will bring to ~140°F). Reserve rendered fat for finishing vegetables if desired.

Sauteed apples & parsnip

    Prepare ingredients

    Peel and cut parsnips into 1/2-inch dice so they total about 2 cups. Core and cut the apple into similar 1/2-inch dice to make 1 cup. Mince the shallot and measure thyme.

    Cook parsnip

    Heat 1 tablespoon butter and 1 teaspoon olive oil in a medium skillet over medium heat. Add diced parsnips and a pinch of salt. Cook, stirring occasionally, until parsnips are tender and beginning to brown, about 8–10 minutes. If they brown too fast, lower the heat and cover briefly to steam through.

    Add shallot & apple

    Add the minced shallot to the pan and cook 1 minute until fragrant. Add the diced apple and cook 2–3 minutes until the apple softens but still holds shape.

    Deglaze & finish

    Deglaze the pan with 2 tablespoons apple cider or dry white wine, scraping up any browned bits. Stir in thyme, 1 teaspoon lemon juice, 1 teaspoon salt, and 1/2 teaspoon black pepper. Adjust seasoning to taste. If reserved duck fat is available, stir in 1 teaspoon to finish for extra flavor. Keep warm until plating.

Cranberry Black Pepper Gastric (sauce)

    Cook cranberries

    In a small saucepan combine 1 cup cranberries, 1/2 cup sugar, 1/2 cup water, and 1 teaspoon crushed black peppercorns. Bring to a simmer over medium heat, stirring so sugar dissolves, then reduce to low and simmer gently until cranberries have burst and sauce has thickened slightly, about 8–12 minutes.

    Acid and finish

    Stir in 1 tablespoon red wine vinegar and continue simmering 1 minute. Remove from heat and swirl in 1 tablespoon cold unsalted butter to add sheen and round the flavor. Taste and season with 1/4 teaspoon salt or more sugar/vinegar to balance sweetness and acidity. Keep warm or hold at very low heat; sauce will thicken as it cools — thin with a splash of water if too stiff for plating.

Crisp Sage

    Fry sage leaves

    Heat 1 tablespoon olive oil in a small frying pan over medium-high heat. When shimmering, add sage leaves in a single layer. Fry 10–20 seconds per side until edges crisp and color deepens slightly. Remove with tongs to a paper towel-lined plate and immediately sprinkle with a light pinch (1/8 tsp) of salt. Keep crisp — they cool and remain crunchy for several minutes.

Finishing & assembly

    Slice duck

    After the duck has rested 8–10 minutes, slice each breast on a diagonal into 1/4-inch thick slices. Arrange slices slightly fanned on warm plates.

    Plate components

    Spoon a generous tablespoon of the cranberry black pepper gastric onto each plate (or pool under the duck), place a portion (about 1/2 cup) of sautéed apples & parsnips beside the duck, and top the duck with 2–3 crisp sage leaves per serving. Dot or brush a small amount of the reserved duck fat around the vegetables if desired, and scatter microgreens or parsley as garnish.

    Serve

    Serve immediately while duck is warm and skin remains crisp. Recommended internal temperature after resting: about 140°F (60°C) medium; adjust cooking to preferred doneness.
