Chai-Poached Pears

Prepare pears

Peel the pears, leaving stems intact if desired. Halve them lengthwise and use a small spoon or melon baller to core the center, removing seeds. Pat dry and set aside.

Make chai poaching liquid

In a wide saucepan combine 800 ml water, 200 ml whole milk, loose tea or tea bags, crushed cardamom pods, cinnamon stick, cloves, sliced ginger, brown sugar, vanilla extract and lemon zest. Bring to a gentle simmer over medium heat, stirring to dissolve the sugar. Once it reaches a simmer, lower heat to maintain a gentle poach and simmer for 5 minutes to infuse flavors.

Poach pears

Carefully add the prepared pear halves to the poaching liquid, cut side down. Ensure liquid covers pears—add a little extra water or reduce liquid level by simmering if necessary. Simmer gently for 12–18 minutes depending on pear ripeness: pears are done when tender when pierced with a knife but still hold shape. Turn pears once halfway to ensure even color.

Cool in syrup

Remove the pan from heat and let pears cool in the chai syrup to room temperature (about 30 minutes) to absorb flavor. Transfer pears and some syrup to a container and chill in refrigerator at least 1 hour (or up to overnight). Reserve poaching liquid for glazing/serving.

Infuse dairy

In a small saucepan combine 300 ml heavy cream and 100 ml whole milk with 1 tbs loose chai or one tea bag. Warm over medium heat until it just reaches a simmer; remove from heat and steep 8–10 minutes, covered, to infuse. Strain out tea leaves (or remove tea bag) and discard solids. Return infused cream to saucepan and rewarm gently.

Temper eggs

In a bowl whisk together 3 egg yolks, 60 g granulated sugar, 10 g cornstarch and a pinch of salt until smooth and pale. Slowly drizzle about 60–80 ml of the warm infused cream into the yolk mixture while whisking constantly to temper. Then pour tempered yolks back into the saucepan with the remaining cream.

Cook custard

Cook the mixture over low–medium heat, stirring constantly with a spatula, until it thickens enough to coat the back of a spoon (about 4–6 minutes). Do not boil. Once thickened, remove from heat and whisk in 20 g cold cubed butter until incorporated for shine and silkiness. Stir in 1 tsp vanilla if desired. Transfer to a bowl, cover the surface with plastic wrap to prevent skin forming, and chill until cool, at least 1 hour.

Whipped Mascarpone

Whip mascarpone

In a chilled bowl combine 200 g mascarpone, 80 ml cold heavy cream, 20 g powdered sugar, 1 tsp vanilla and a pinch of salt. Whip with an electric mixer on medium speed until mixture is smooth and holds soft peaks (do not overbeat or it may become grainy). Keep chilled until plating.

Pecan Microwave Cakes

Prepare batter

In a medium bowl whisk together 100 g all-purpose flour, 1 tsp baking powder, 0.5 tsp salt and 0.5 tsp ground cinnamon. In a separate bowl whisk 1 egg with 60 ml milk, 30 ml vegetable oil, 1 tsp vanilla and 60 g brown sugar until sugar is mostly dissolved. Combine wet into dry and stir until just combined. Fold in 60 g chopped pecans.

Portion into ramekins

Divide batter evenly between four microwave-safe ramekins or mugs (fill about two-thirds). Optionally brush tops with a little melted butter for extra sheen and flavor and sprinkle a few additional chopped pecans on top.

Microwave cook

Microwave each ramekin on high for 60–75 seconds depending on your microwave power. Cakes should be set on top but still moist. If underdone, microwave in additional 10–15 second bursts. Let cakes rest 1–2 minutes before unmolding. If desired, run a thin knife around edges and invert onto a plate (or serve in ramekin).

Finishing & Assembly

Warm syrup

Warm a few tablespoons of the reserved chai poaching syrup gently in a small saucepan or microwave (do not boil) to use as a glaze and for drizzling.

Plate

Place a pecan microwave cake on each plate or serving bowl. Top with a generous spoonful of chilled chai cream and a dollop of whipped mascarpone. Arrange 1 pear half (or two smaller slices) alongside or perched on the cake. Drizzle warmed chai syrup over the pears and cake (about 1–2 tbs per serving) and scatter toasted pecan halves around.

Garnish & serve

Finish with a light dusting of powdered sugar, a small drizzle of honey or maple syrup (about 1/2 tbs per plate), and a mint leaf or microgreens. Serve immediately so the cake is slightly warm while cream and pears are cool — the contrast is part of the appeal.
