Mini Biscuits

Preheat and prepare
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Cut cold butter into dry ingredients
Whisk together flour, granulated sugar, baking powder, and salt in a bowl. Cut cold butter into 1/4-inch cubes and use a pastry cutter, two knives, or your fingertips to cut the butter into the flour until the mixture resembles coarse crumbs with some pea-sized bits of butter remaining.

Add liquids and form dough
Whisk cold milk, cold heavy cream, and vanilla in a small bowl. Pour the liquid into the flour-butter mixture and gently stir with a fork until it just comes together. Do not overwork — dough will be slightly shaggy but cohesive.

Shape and chill
Turn the dough onto a lightly floured surface and press it together into a 3/4-inch thick rectangle. Fold the dough onto itself 2-3 times to create layered flakiness, then pat again to 3/4 inch. Use a 1.5-inch round cutter to stamp out mini biscuits (you should get about 12). Reroll scraps once and cut until used. Place biscuits on the prepared sheet. Beat the egg and brush the tops, then sprinkle with turbinado sugar if using.

Bake and cool
Bake for 10–12 minutes or until golden on top and bottom. Remove to a rack and cool at least 10 minutes. For a deconstructed presentation, cool completely so biscuits are slightly firm before assembling.
Berries & Syrup

Prepare berries
Hull and quarter the strawberries; halve larger pieces so most are bite-sized. Gently toss strawberries and raspberries (if using) with 2 tablespoons granulated sugar, lemon juice, and vanilla. Let sit at room temperature for 15–20 minutes to macerate and release juices.

Make quick syrup (optional)
If you prefer a glossy syrup for plating, reserve the maceration juices and heat them in a small saucepan over medium heat until barely simmering, 2–3 minutes. Optionally reduce by 1–2 minutes to thicken slightly. Cool to room temperature before using.
Whipped Cream

Prepare stabilized cream (optional)
If using cream cheese for stability, beat the room-temperature cream cheese until smooth. Keep it ready.

Whip cream
Chill a mixing bowl and beaters briefly. Pour cold heavy cream into the bowl, add powdered sugar and vanilla. Whip on medium-high speed until soft peaks form. If using cream cheese, add the whipped cream cheese and whip briefly to combine until medium-stiff peaks form. Taste and adjust sweetness.

Transfer
Place whipped cream in a piping bag fitted with a large round or star tip, or keep in a bowl for spooning.

Prepare plating
For a deconstructed presentation, plan individual plates or a shared board. Break mini biscuits into halves or large shards with a fork or by hand to create varied textures.

Assemble components
On each plate: arrange 2–3 biscuit halves/shards, spoon a small pile of macerated berries next to them, and pipe or dollop 2–3 quenelles of whipped cream around the berries and biscuits. Drizzle a teaspoon or two of the reserved berry syrup over the biscuits and plate for shine and flavor. Scatter a couple of whole raspberries or halved strawberries for height.

Finish
Garnish with a mint leaf on each dollop of cream and a light sprinkle of lemon zest. Serve immediately so biscuits retain a little crispness; if assembling ahead, keep whipped cream chilled and add biscuits just before serving to avoid sogginess.
