Crepe Batter (makes about 12 crepes)

Combine dry ingredients
In a large mixing bowl, whisk together 2 cups all-purpose flour, 2 tsp granulated sugar, and 1 tsp fine sea salt until evenly combined.

Whisk wet ingredients
In a separate bowl or large measuring cup, lightly beat 3 large eggs, then add 2 cups milk, 1 cup water, 3 tbsp melted unsalted butter and 1 tsp vanilla extract. Whisk until homogenized.

Make a smooth batter
Gradually pour the wet mixture into the dry ingredients while whisking continuously to avoid lumps. Once combined, strain the batter through a fine-mesh sieve into a bowl or pitcher to remove any remaining lumps. The batter should be thin and pourable. If too thick, whisk in up to 2–4 tbsp additional water or milk.

Rest the batter
Cover the batter and refrigerate for at least 30 minutes (up to 2 hours). Resting hydrates the flour and produces a more elastic crepe. Stir gently before using.

Prepare fruit
Hull and thinly slice strawberries, wash blueberries, and slice bananas right before service to prevent browning. Place each fruit in its own shallow serving bowl and keep chilled until use.

Prepare mascarpone whipped cream
In a chilled bowl combine 1 cup mascarpone and 1 cup whipped cream (or 2 cups if you prefer extra). Whisk briefly to combine until soft peaks form; sweeten with 2–3 tbsp powdered sugar to taste. Keep chilled in the refrigerator and transfer to a piping bag or serving bowl at the station.

Set out fillings
Place lemon curd, Nutella, maple syrup, honey, toasted almonds, toasted coconut, chopped pistachios, and grated dark chocolate in small bowls with spoons for easy assembly.

Warm sauces
Gently warm berry compote, caramel sauce and maple syrup in separate small saucepans over low heat or in the microwave in short bursts. If using orange blossom water, stir 1 tsp into berry compote for a floral note. Keep sauces warm in insulated containers for service.

Cook crepes
For each crepe, pour about 1/3 cup (80 ml) batter into the center of the hot pan, immediately lift the pan and swirl to spread the batter into a thin, even circle. Cook 45–60 seconds until the edges lift and the bottom is lightly golden, then flip with a spatula and cook 15–30 seconds more. Transfer to a warm plate and keep crepes covered with a clean towel or in a low oven (around 90–100°C / 200°F) to stay warm while you finish the batch.

Assemble at the station
Lay a warm crepe on a plate. Add fillings as desired: a smear of Nutella or lemon curd, a spoonful of mascarpone mixture, and an assortment of fresh fruit. Drizzle with warmed berry compote, maple syrup, honey or caramel. Finish with a dusting of powdered sugar and sprinkle toasted almonds, coconut or chopped pistachios and grated dark chocolate for texture and visual appeal.

Presentation & serving
Fold crepes into quarters or roll them and garnish with a small dollop of whipped cream and a few whole berries. Offer extra sauces on the side. For an unlimited crepe station, keep batter chilled between batches, replenish filling bowls frequently, and maintain at least one hot pan and an assistant to cook crepes continuously for guests.
