Rinse and sort cranberries
Rinse the cranberries under cold water and pick out any soft or bruised berries. Drain well.

Process the relish
In a food processor, add the rinsed cranberries, orange zest, 2 tablespoons of the orange juice (reserve any extra), grated fresh ginger, and apple if using. Pulse in short bursts (6–10 pulses) until the mixture is coarsely chopped — you want a chunky relish, not a puree. Scrape down the sides once or twice to ensure even texture.

Sweeten and spice
Transfer the chopped cranberry mixture to a mixing bowl. Add the granulated sugar, ground cinnamon, maple syrup, remaining orange juice (if any), and a pinch of sea salt. Stir thoroughly until the sugar is incorporated. Taste and adjust: add more sugar or maple syrup if you prefer sweeter, or more orange juice for brightness.

Finish and serve
Shortly before serving, fold in the toasted chopped walnuts or pecans if using. Give the relish a final stir, taste for seasoning and adjust with a small pinch more salt, a squeeze of orange juice, or a drizzle of maple syrup if needed. Serve chilled or at cool room temperature.

Make-ahead and storage
Store in an airtight container in the refrigerator for up to 7–10 days. This relish also freezes well: portion into airtight containers and freeze up to 3 months; thaw overnight in the refrigerator before serving.
