    Prepare glass

    Chill an old-fashioned or rocks glass by filling it with ice and setting aside while you build the cocktail.

    Measure and combine

    In a mixing glass or cocktail shaker, pour 2 oz bourbon, 0.75 oz sweet vermouth, 0.5 oz fresh lemon juice, 0.25 oz maple syrup, and 0.5 oz Amaro. Add 2 dashes orange bitters and 1 dash Angostura bitters.

    Add ice and stir

    Add 6 large ice cubes to the mixing glass. Stir gently and continuously for 20–30 seconds (about 15–20 full rotations) until the mixture is well chilled and slightly diluted, and the outside of the mixing glass feels cold.

    Prepare serving glass

    Discard the ice from the chilled rocks glass. Place a large ice cube or sphere into the glass.

    Strain

    Using a julep strainer or Hawthorne strainer, double-strain the stirred cocktail into the prepared rocks glass over the large ice cube to remove any tiny ice chips or lemon pulp.

    Express and garnish

    Take the orange peel and hold it over the drink, skin side down. Give it a firm twist to express the oils onto the surface of the cocktail, then lightly rub the peel around the rim of the glass and drop it into the drink as a garnish.

    Serve

    Present immediately. Sip slowly to appreciate the layered herbal, sweet, citrus, and bitter flavors. Adjust future batches by increasing maple syrup for sweetness or lemon for brightness.
