Cocktail

   Prepare glass

   Chill a coupe or martini glass by filling it with ice water while you build the drink. After at least 2–3 minutes, discard the ice water and set the glass aside.

   Rinse glass with absinthe

   Pour about 0.1 tsp (a few drops) of absinthe into the chilled glass, swirl to coat the inside, then pour out or discard the excess. This leaves an aromatic anise note without overpowering the cocktail.

   Build and chill the cocktail

   In a mixing glass or cocktail shaker, add 1 cup of ice, 2 oz gin, 0.5 oz dry vermouth, 0.25 oz green Chartreuse, 0.25 oz fresh lime juice, 0.25 oz simple syrup, and 2 dashes Angostura bitters.

   Stir (or shake) to dilute

   Stir the mixture vigorously with a bar spoon for 20–30 seconds (or shake for 10–12 seconds if you prefer a slightly more aerated mouthfeel) until the outside of the mixing glass is well-chilled and slightly frosted. This chills and dilutes the drink to the proper balance.

   Strain

   Double-strain (use a Hawthorne strainer and a fine mesh strainer) the cocktail into the absinthe-rinsed chilled coupe to keep the texture silky and free of small ice shards.

   Garnish and serve

   Express the oils of a lemon twist over the surface of the cocktail and run the twist around the rim, then drop it into the glass. Optionally place an edible flower or candied violet on the surface for a theatrical, old-fashioned 'lace' look. Serve immediately.
