    Chill glass

    Place an Old Fashioned (rocks) glass in the freezer for 5–10 minutes or fill it with ice and cold water while you prepare the cocktail to ensure the glass is well chilled.

    Measure and combine

    In a mixing glass or shaker, add 2 oz Amaro Nonino Quintessentia, 0.75 oz aged rum, 0.5 oz fresh lemon juice, 0.25 oz simple syrup, and 2 dashes of Angostura bitters.

    Add ice and stir

    Add a large handful of ice (or three large ice cubes) to the mixing glass. Stir gently but thoroughly for 20–30 seconds until the mixture is well chilled and slightly diluted (the mixing glass should sweat). Stirring preserves clarity and mouthfeel.

    Prepare serving glass

    If you chilled the serving glass in the freezer, remove it. Discard ice and water if you used that method. Place 1–3 large fresh ice cubes into the chilled Old Fashioned glass.

    Strain and garnish

    Double-strain or use a Hawthorne/strainer to pour the cocktail from the mixing glass into the prepared rocks glass over the ice. Express an orange twist over the drink by holding it with the outer peel facing down and twisting to release the oils, then rub the peel around the rim and drop it into the drink as a garnish.

    Serve

    Serve immediately. Sip slowly to appreciate the silky, herbaceous profile of Amaro Nonino balanced by the warm base of aged rum and a bright lemon lift.
