Duck Preparation
Marinate the Duck
In a bowl, combine soy sauce, hoisin sauce, five-spice powder, minced garlic, minced ginger, and honey. Add the duck breasts and coat well. Marinate for at least 30 minutes.
Roast the Duck
Preheat the oven to 400°F (200°C). Place the marinated duck breasts skin-side up on a baking tray and roast for 20-25 minutes or until the skin is crisp and the meat is cooked through. Let it rest before slicing.
Pad Thai Assembly
Prepare the Noodles
Soak the rice noodles in hot water for about 20 minutes until softened. Drain and set aside.
Stir-fry the Pad Thai
In a large skillet or wok, heat vegetable oil over medium heat. Add the beaten eggs and scramble. Add the softened noodles, fish sauce, and chili flakes, stir-frying for 3-4 minutes.
Combine Ingredients
Add the bean sprouts and green onions to the skillet, and toss well. Slice the roasted duck and serve on top of the noodles.
Garnish and Serve
Garnish the dish with crushed peanuts and lime wedges. Serve while hot.
